Simmer Down!


Simmer, Boil or Rolling Boil?


Water boils at 212 degrees F at sea level. Sometimes it is hard to figure out what kind of party those bubbles are having in the pot! I will try to explain it so the proper process can be used.


Simmer: a gentle cooking process with fine bubbles that mostly appear around the edges and release a little bit of steam. It's like a hot tub for meats and anything that needs that slow, sweet stovetop heat!

Boil: a consistent and constant rising of large bubbles that produce steam continually. Think of it like a rave and everyone is dancing, almost in unison, to the steady drone of whatever the DJ is spinning. This method is often used to cook root veggies.

Rolling Boil: a surface that is vigorously erupting with bubbles and steam. Volcanic, crazy bubbles that can't be stopped! Imagine a mosh pit of angry adolescents, whose mothers never hugged them enough, and they are just throwing punches at each other while "listening" to the likes of Gojira (cuz Gojira). This is the pot of water you toss your pasta into or blanch those garden veggies so you can freeze them for the winter. And yes, vegetables are so Metal!


There it is, the short version of "What's the Difference", where we discovered you just have to choose which party you wanna go to! Easy enough! Now go poach that egg! For that you'll need a gentle, not quite a simmer. :/ Maybe I will make a video on the subject.
